SUPERIOR GRADE: Technically speaking, all short-grain rice is suitable for making sushi. However, most short-grain rice available in the UK or Europe is Originario (a variety from China) or Selenio (an Italian variety) produced in Northern Italy. Both have characteristics very similar to Japonica rice. But, compared with Emma Basic Japonica variety cultivated in Vietnam, you can certainly taste the difference. 

 

PERFECT TEXTURE: Do you cook your pasta to Al dente? If yes, then this is the rice for you, sticky yet firm. This is curcial because the rice must hold its shape when forming sushi  but still be soft and pleasant to eat . the righ balance of stickiness ensures it binds well to other sushi ingredients without being overly mushy or dry , delicious. Simply cook the rice and enjoy with a pinch of salt. 

 

BEYOND SUSHI: In Emma's personal opinion, sushi is not a daily food in japan. Sushi is for wedding, birthday, New Year eve etc. Rice is daily food. You don’t have to make sushi, simply cook rice it goes well with any vegetable, meat or fish

 

RICH SOIL & WATER: Grown by farmers in the Mekong Delta, Vietnam: "The rice bowl of Vietnam region". The Delta's rich soil is ideally suited for growing rice. It provides the foundation to grow rice with consistency in texture and taste.
