What is vermicelli?

The Cambridge dictionary says: A type of pasta made in long, thin threads.

The Oxford English Dictionary records evidence from before 1668, in the writing of Wiliam Davenant.  Essentially, vermicelli is borrowed from the Italian.


  • Latin: Vermis = worm

  • Italian suffix: -celli = little or small


So yes, vermicelli literally means "little worms", which—let’s be honest—doesn’t sound quite as appetizing as its more elegant description: "the thin version of spaghetti. In Chinese, vermicelli is 粉丝 (fěn sī) and can be made from rice, mung bean, green pea, or sweet potato starch, depending on the region. In Japanese, vermicelli is named as 春雨 (harusame), which means "spring rain"—gentle and delicate, unlike raining cats-and-dogs of summer storms!


Emma Basic Vermicelli package suggests four different ways to prepare. In my parents’ kitchen, it was served piping hot in soup, tossed cold with soybean paste, or stir-fried with green veggies. The first time I had vermicelli in a cold spring roll. Surprisingly, not in Vietnam, but in Shizuoka, Japan. Nama Haruaki was the name on the menu. Now, watching Gordon Ramsay make in a video, it all looks ridiculously easy—like, “just roll it together, no brain required” easy.  Is it really that effortless? I think not. I bet he practiced, swore a bit, practiced more, and probably left a few assistants traumatised in the process!
