Ingredients
25g dried Emma Basic Wakame, pre-soaked in warm water for 2-3 minutes, drained
150g French red radish, washed, top, tailed, sliced to small matchstick strips
½ cucumber, washed, sliced around centre, into small matchstick strips
200g dried buckwheat noodles, cooked in boiled water to packet instructions, drained, rinsed, drizzled with toasted sesame oil
1 tablespoon mixed black and white sesame seeds
For Dressing
3 tablespoon Tamari
2 tablespoon rice vinegar
2 tablespoon toasted sesame oil
Method
1. Soak the Wakame seaweed for 2-3 minutes in warm water. Rinse. Drain. Set Aside.

Bring a litre of water to the boil. Add the buckwheat noodles. Cook for 5 minutes.

Chop the radish and cucumber.

Drain the buckwheat noodles in cold water. Rinse. Drizzle over toasted sesame oil.

In a bowl, add the Tamari, rice vinegar and toasted sesame oil and mix well. Add the black and white toasted sesame seeds.
To serve place the noodles in a deep mixing bowl. Sprinkle over the cucumber, radish and wakame. Pour over the sesame dressing, toss to mix well and eat immediately.
